Simply cut out the rest that you dont want in your final product(reserving head area of image) in software such as gimp and overlay it on top of skin you wish to use, merge layers and export as a new skin, place it in the folder where your skin is. You can make a seperate mhmat file for it, or rename it to replace existing unwanted skin.

Hello, I have attempted to install this skin in makehuman several times now saving both the MHMAT file, the thumb file and the texture to the skins folder and I have always encountered the same issue. If you know how to solve this issue, please let me know as the skin looks excellent but I'm not able to use it!

Objects in Blender can have
Objects in Blender can have more than one material and each material can be assigned to its own set of faces/verts.
Simply make one material for the body, the way you want it to be then use this second material and assign it ONLY to the head and face.
