how can I keep the camera from snapping to default positions when tweaking stuff? also can I choose to use a smooth gray texture instead of the default one?

More details please. What version of MH are you using? Some versions of MH automatically position the camera, there might be a setting to disable auto camera focusing in the settings tab, depending on what version of MH you have.

That's version is ancient. Try alpha 7 (http://www.makehuman.org/content/download_alpha_7.html).
Or try the latest nightly (soon to be released as alpha 8) from: http://download.tuxfamily.org/makehuman/nightly/

you know what I actually just figured out I am using alpha 7 so make a note that in the drop down menu when you select about makehuman, it still says alpha 6 even though on startup it says alpha 7 but anyway I'm not seeing any camera options

You are right, that feature appears to have been introduced after the A7 release.
In that case, you will have to use the nightly build or A8 in the near future to get rid of the camera behaviour.
