I have seen some screenshots/videos where people change those things in a Menu called "Model" or something equal (i dont really remember) but I have not such Menu 9in MPFB. I only have "New Human" "Apply Asset" "Manage Presets" "Create Asset" "Operations" "System and Resources" "Developers"
If you go the all MPFB route and don't use MakeHuman as a starting point, you can do the entire modeling in MPFB.
Easiest way to check this out is to use the new human "from scratch" and select the created mesh. This way the modeling tab should appear.
The entire procedure is described in the later part of the getting started guide at http://static.makehumancommunity.org/mp ... arted.html
If you import from MakeHuman you will get a baked mesh with all targets applied. This prevents you from being able to use the corresponding target sliders in MPFB.

These settings are nothing strange. It's just two lights, a background and a HDRI. The skin etc are very close to the MPFB defaults.
I'll see if I can clean up my test scene a bit and post it in the repo.
