Symmetry options, head shape

There's a couple of things I either don't grasp or that don't work, not sure:
-there are no per-selection symmetry options - never were? Let's say I set up "left hand" and want to make only the left hand's measures symmetrical.
-I cannot modyfy the head shape much. Overall size, yes, but when for exampe I mark temples or brows I cannot move them or scale them. The head shape is pretty much limited to the defaults apart from the chin. (But not jaws for example.)
-the face sections don't have names that are displayed, kind of hard to describe where I get stuck here
